One recipe four mini cakes…

Bite size cakes look so inviting

I love mini cakes but one flavour is not interesting enough, I need to have options…

That is why I have this recipe that I can turn into different flavours and it goes really well with a strawberry smoothy.

This is my Saturday afternoon treat and just after 15 min of baking in the oven.

Ingredients

Basic Dough

4 eggs

1/2 cup caster sugar

1 cup blanched almond meal

2 cups plain flour

1 teaspoon baking powder

1 teaspoon vanilla extract

Banana and Caramel

1 banana

1 teaspoon frangelico

1 tablespoon caramel

1 teaspoon cinnamon

Raspberry and Coconut

2 teaspoons rose water

14 raspberries

SQ shredded coconut

Chocolate and Coffee

SQ crushed Cocoa beans

75 g couverture 70%

25 g unsalted butter

1 teaspoon cardamom

1 teaspoon instant coffee

Apple and pecans

12 apple rings, chopped

1 teaspoon lemon essence

1 teaspoon grand marnier

12 pecan nuts
