Baby Cakes and Chocolate Chips Cookies to die for…

“I don’t have time…” That seems to be an excuse for a lot of things…

So since the 2012 started and a new year means hope for new causes… I decided to manage my time better and I’ve found heaps of new ideas to accomplish this.

Turning different ingredients into new recipes is something that I’ve always loved to do. And now is the right time to do it.

I love the new trend in cakes…the “cake pops”! This popular xs cakes look so cute and they seem to be the perfect bite!!!

For a sweet treat: My Secret Chocolate Chip Cookies

Yield: 
Makes 36 cookies

Ingredients

250 g unsalted butter

2 cups raw sugar

3 x-large eggs

2 cups plain flour

1 cup flour “00”

1/3 cup blanched almond meal

1 teaspoon baking powder

2 teaspoons cinnamon

1 teaspoon ginger

1/2 teaspoon allspice

1/2 teaspoon nutmeg

1 tablespoon malt extract

2 cup walnuts

2 cup chocolate chips

Directions

  1. .    Preheat oven to 200 degrees. Line baking sheets with baking paper or nonstick baking mats; set aside.
  2. .    In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugars. Add eggs, one at a time, mixing well after each addition. Reduce speed to low and add flours, almond meal, baking powder, spices, malt, and chips and walnuts; mix until well combined.
  3. .    Using Ice Cream Scoop – No. 6 scoop cookie dough onto prepared baking sheets, about 3 cm apart. Bake until lightly browned, but still soft and moist (about 10 to 15 minutes). Cool slightly on baking sheets before transferring to a wire rack to cool completely.
